Mini Carrot Cakes


Ingredients:
2 medium Carrots
100g Plain Flour 
100g Sugar
1 Egg
75g Soft Margarine
1 teaspoon of Baking Powder
1 teaspoon of Cinnamon

Method:
1.Turn your oven to 180 degrees
2. Skin then grate the Carrots,
3. Add the Carrots, Sugar and Margarine in a bowl and mix,
4. Add the flour, Baking powder and Cinnamon and stir,
5. Crack and whisk the Egg in a small bowl then add it to the mix,
6. Give it one final stir then evenly spoon the mixture into 10 cake cases and put in the oven,
7. Bake for 20 minutes,
8. Take out of the oven and cool for 10 minutes,
9. Enjoy!!

For a healthy snack, why not add 75g of Raisins or 25g of Mixed Nuts!
