Cupcakes

You can change the flavouring in these cupcakes if you want for different variations. Try the juice and rind of a lemon or orange for a nice citrus alternative, or simply add chocolate chunks or cocoa powder for chocolatey treats!

Ingredients:
6oz Self raising flour
6oz caster sugar
6oz margarine
3 Eggs
2 tsp vanilla extract

Method:
Preheat the oven to 180.c
1. Cream margarine with sugar until light and fluffy.
2. Add the eggs one at a time, stirring well.
3. Gently sift in the flour, stirring well to get a nice consistency.
4. Add the vanilla extract and 1 tsp of baking powder if you want your cupcakes to rise extra well!
5. Line a cupcake tin with paper cupcake cases and spoon a golf ball sized amount of mixture in each one.
6. Place in the preheated oven for about 20 mins or until golden brown on top and when a skewer will come out of their centre clean.
7. Place on a wire cooling rack and let cool completely before icing or decorating.
