Heavenly Caramel Icing

Ingredients:
2 tablespoons caster sugar
200g caster sugar
125g butter
125ml whipping cream

Method:
1. Put 2 tablespoons sugar in a saucepan.
2. Cook over medium heat until sugar is dissolved and becomes a golden brown in colour, but do not stir.
3. Set aside.
4.Combine remaining sugar, butter and cream in a medium saucepan.
5. Cook over low/medium heat, stirring constantly, until it comes to the boil.
6. Stir in caramelised sugar, and return to the boil.
7. Cook for 2 minutes, stirring constantly then remove from heat.
8. Beat until icing has a good spreading consistency.
