Coffee and Walnut Cake

Anyone can make this cake, it is so easy and tastes great too!

Ingredients:
6oz self raising flour
6oz Marg.
6oz Caster Sugar
3 eggs
1 1/2tsp baking powder
3tbsp coffee dissolved in 75ml water
125g walnuts, lightly covered in about 3-4tsp vanilla essence


Method:
1. Preheat Oven to 170°c/GM3
2. Line and grease sandwich cake tins
3. Beat sugar and marg. together, then beat in eggs, flour and baking powder.
4. Then beat in coffee, 1tbsp at a time, if it goes a bit split, stir in a bit more flour.
5. Add and stir in walnuts, then spoon mix into tins and level the tops.
6. Bake for 25-30 mins, until a skewer comes out of the middle clean.

Icing:
Marg.
Icing sugar
2 tbsp coffee, dissolved in about 75ml milk


Method:
1. Cream the marg. so that it is soft and fluffy.
2. Beat in icing sugar, so that is sweet to your taste.
3. Add the coffee, 1tbsp at a time.
4. Taste and alter to your liking (you want it to taste nice and coffeey)
5. Spread in between sandwich cakes and spoon a few small bloches ontop.
6. Stick a few Walnuts on these blotches
